Richard Castle. (Probably not the first to answer with him, but it's true.)
First of all, he's ruggedly handsome.
Secondly, he's actually very intelligent, and I think it would be interesting to pick his brain about his writing process, where he finds inspiration, what he thinks his best work is, his worst work, what his advice would be to aspiring writers, and so on. I think he'd be an excellent conversation partner. I'm pretty sure dinner conversation would never be boring.
Obviously as he is not a real person, none of this really matters. But if I could have a dinner date with Nathan Fillion I'd be ridiculously happy, and I would probably pick his brain about why he picks the projects he does, his inspirations, advice to aspiring actors, etc.
